MARKET TUNA SALAD
Serves 2-3
1 large can water-packed albacore tuna, drained
1/2 cup each chopped cucumber and grape tomatoes
1/4 cup chopped kosher dill pickles
1/8 cup chopped red onion
1/2 cup olive oil mayo
juice of 1/2 lemon
1 Tbsp lemon pepper
salt and ground black pepper
1. Mix all ingredients, being careful not to break up the tuna too much, leaving it in chunks. Serve on mixed greens or in a tuna melt by adding your favorite cheese and top crusty bread. Heat in a 375 oven until cheese is melted.
