RISI E BISI

Risi e bisi, an Italian comfort food, can be served as a main or side dish to go along with a meat entree. This recipe is a fluffier version of the traditional soupy Venetian-style dish.
2 Tbsp olive oil
2 shallots, minced
3 garlic cloves, minced
1 cup basmati rice
2 cups chicken broth
1/4 tsp each salt and freshly ground black pepper
1 cup chopped ham
3/4 cup green peas
2 Tbsp chopped fresh parsley
1/4 cup grated Parmesan
1. Heat olive oil in a large saute pan over low heat. Add shallots and garlic and cook about 3 minutes. Stir in rice until coated with oil. Add broth, salt and pepper. Bring to a boil over high heat. Cover and reduce heat to low, simmer 15 minutes.
2. Stir in ham, peas, parsley and Parmesan. Stir to combine and heat through, about 3-5 minutes.
